In a separate bowl, whisk the egg, milk, melted butter, and vanilla extract until combined.4. Pour the wet ingredients into the dry ingredients and stir just until no streaks of flour remain. The batter will be thick.5. Gently fold in the diced apples.6. Scoop 1/4-cup mounds of batter onto the prepared baking sheet, spacing them 2 inches apart. Flatten each mound slightly with the back of a spoon.7. Bake for 18 to 20 minutes, until golden on top and a toothpick inserted in the center comes out clean.8. Let the fritters cool on the pan for 5 minutes.9. Whisk the powdered sugar, milk, and vanilla together until smooth. Dip or spoon the glaze over the warm fritters.10. Let the glaze set for a few minutes on a wire rack before serving.
