Ingredients
Method
- 1. Preheat oven to 350°F (175°C). Grease and line an 8x8-inch pan with parchment paper.2. Whisk flour, baking soda, cinnamon, and salt in a medium bowl.3. In a large bowl, whisk sugar, brown sugar, and oil. Add egg and vanilla; whisk until smooth.4. Stir in mashed banana and drained crushed pineapple.5. Fold in dry ingredients until just combined, then fold in toasted pecans.6. Pour into prepared pan and bake 28–32 minutes, until a toothpick comes out with a few moist crumbs.7. Cool in the pan 15 minutes, then transfer to a wire rack to cool completely, about 45 minutes.8. Beat cream cheese and butter until smooth. Add powdered sugar, vanilla, and salt; beat until fluffy.9. Spread frosting over the cooled cake, top with extra pecans, slice into 9 squares, and serve.
Notes
⦁ Drain the crushed pineapple well to avoid a dense, soggy cake.
⦁ Store frosted cake in the refrigerator for up to 5 days.
⦁ Freeze the unfrosted cake, well wrapped, for up to 2 months.
⦁ For a nut-free version, omit the pecans from the batter and topping.
